Aunty Katherina's Haole Laulau

1/4lb sliced "Dried Beef" (Armor brand is in the potted meat section)
or "Chipped Beef" - to cover the bottom of a 9x13 pan
8-10 boneless skinless chicken thighs
1lb frozen spinach, defrosted and drained - squeeze all the water out
2- 10 3/4 oz cans of Cream of Mushroom Soup (Campbell's works best - don't use the low fat kine)
Raw bacon - enough for all the pieces of chicken
Preheat oven to 400 degrees.
Layer the beef (overlapping) in the bottom of the 9x13 pan. Wrap each piece of chicken in bacon.
Lay chicken/bacon on top and spread spinach over it. Top with cream of mushroom soup.
Bake for 60-75 min or until chicken is cooked thoroughly.
OPTIONAL: For all you true transplants out there who have the SAD little Ti leaf plant hidden in the corner of the living room (you know you do), take a leaf or two (if get), wash them and place over the whole thing before baking.
