Aunty Amy's Hawaiian Cobbler

5 cups mixed sliced peaches & blueberries (or fruit of your choice)
2 Tbsp sugar
2Tbsp All-Purpose Flour
1/4 tsp cinammon
1 Tbsp lemon juice
King's Hawaiian Sweet Bread


Grease or butter an 8" or 9" cake pan or baking dish. Mix the fruit with the sugar, flour, cinnamon, and lemon juice, and spread it in the pan in an even layer. If you're using frozen fruit, allow it to thaw before topping.

Remove crust from the bread (if the crust is tough). Arrange on top of fruit to cover completely, cutting to fit as necessary.

Whisk the topping ingredients together until well blended. Pour slowly into the dish, and let sit for 15 minutes while you preheat your oven to 350°F. Bake the cobbler for 45 to 55 minutes, until the topping is golden brown and the fruit is bubbling around the edges. Serve warm. (as I found out you can prepare this a day ahead, store in fridge, and then reheat in a 200 degree oven for about 30 minutes) Yield: 8 servings.

1 1/4 cups sugar
2 tablespoons All-Purpose Flour
2 large eggs
1/2 cup (1 stick) unsalted butter, melted
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla
